Stofu
Last weekend someone on Mastodon posted a link to notalivestream.nl and I was talking about it with my family while we were planning our evening meals for the upcoming week. We were talking about how we could try to exclude meat even more from our diet. And since I was going to make "stoofvlees" this week, I was like - let's try something else. Replace the meat with tofu, and then make it tasty.
Enter Stofu! It's a pretty easy dish to make, since everything's in one pot. Granted we made some mashed potatoes to go along with it. So 2 pots. 😏
Which ingredients did I use?
Throw them in the pot in this same order and you'll have my dish - prepped for 4 persons. Slice everything as small/medium as you like. I like my carrots a bit on the larger side, but my onion on the smaller side. 🤷
- Onion (1 large one will suffice)
- Garlic (loads of garlic, like 6 toes orso. When you're in doubt about how much garlic - add more)
- 5tbsp Olive oil
- 400gr cave mushrooms - they're tasty!
- 500gr tofu
- And now some spices. Pepper / Salt / Garam Masala / Nutmeg mix / Cayenne Pepper / Thyme / Rosemary
- 4 carrots
- 1 fennel
- 1 pack of green asparagus (going to leave this out next time, expensive af)
- 4x 33cl Leffe (Blond)
- 1 bouillon cube
- 2 slices of bread covered with mustard, throw it in "mustard-side" down
- 3 tbsp of Luikse Siroop
That's it! Let it simmer for 2 hours et voila! Stofu! Present it with some mashed potatoes and done.
Somewhere along the way I added a bit of water, since I wanted more simmering and most of the beer had evaporated by then.
It was yummy, so yummy that I'm going to try some other stuff with and try to perfect this dish. Like leave out the green asparagus, since it's simmering so much that their taste is gone by the time you're actually going to eat it. Going to add more carrots per request of our kids. And I'm going try some other tofu, this time I used smoked tofu and I personally thought it clashed a bit much with the other flavours.
